Beaufort

The Beaufort of the Arves

Guaranteed since 1968 by a decree of Appellation d' Origine Contrôlée, Maurienne is part of the production area strictly defined.
Nicknamed the "Prince of Gruyères", Beaufotrt is the noble fruit of the alpine pastures. The will is of course to control quality, maintain the landscape with an extensive ecological policy and represent an important economy in our valley. The average production is limited to 5000 kg per cow per year.

THE DAIRY COOPERATIVE:
Created in 1970 in the old Malcrozet school at the entrance to the Village.
Works with 45 farmers from the municipalities of Albiez, Montrond, St Jean d' Arves and St Sorlin d' Arves.
Production 2 200 000 kg of milk
5000 Beaufort wheels per year
A grinding wheel weighs from 40 to 45 kg
The quality of Beaufort des Arves is recognized internationally and in many competitions.

GUIDED TOURS:
Film on the alpine pastures of the valley, explanation of the Beaufort production. The production rooms are glazed and allow you to see the cheese makers working and the maturing cellars where each wine cellar brine, dirty, scrubbing and turning the grindstone 2 to 3 times a week.
